A refreshing fruit chicken salad combining tender chicken, crisp celery, sweet grapes, pineapple, and pecans, all coated in creamy mayonnaise—perfect for light lunches or gatherings.

Ingredients

  • 1 chicken, cooked, deboned and cut to bite size
  • 1 c. celery, chopped
  • 1 c. green grapes, may be cut in half
  • 1 c. pineapple tidbits, drained
  • 1 c. chopped pecans
  • 1 c. mayonnaise
  • 1/2 c. chopped apples

Instructions

  1. Mix the chicken, celery, green grapes, pineapple tidbits, and chopped pecans in a bowl.
  2. Add mayonnaise and chopped apples to the mixture and stir well.
  3. Season with salt and pepper to taste.
  4. Chill the salad in the refrigerator.
  5. Serve on a bed of lettuce.
