Ingredients

  • 8 boneless chicken breasts
  • 1/2 cup flour
  • 1/2 cup melted butter
  • 1 cup sliced mushrooms
  • 1/2 cup chicken broth
  • 2/3 cup shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Flatten chicken breast halves between two sheets of wax paper to 1/8-inch thickness.
  2. Coat chicken with flour and lightly brown in a skillet using 4 tablespoons of butter.
  3. Pam coat a 9 x 13-inch baking dish and place chicken into it, slightly overlapping each piece.
  4. While browning chicken, sauté mushrooms in the remaining butter.
  5. Sprinkle mushrooms evenly over chicken.
  6. Add chicken broth to the drippings left over from browning chicken and simmer for 10 minutes, stirring occasionally.
  7. Pour sauce evenly over chicken and bake at 400°F for 10 minutes.
  8. Sprinkle shredded Mozzarella cheese over chicken and bake an additional 5 minutes.
  9. Sprinkle grated Parmesan cheese over chicken and serve.
