A vibrant, sweet-filled acorn squash dish featuring dried apricots, raisins, and toasted almonds, perfect for a cozy, nutritious vegetarian main or side.

Ingredients

  • 1 medium acorn squash (about 1 lb.)
  • 2 oz dried apricot halves (about 6 whole)
  • 1 Tbsp raisins
  • 2 Tbsp apricot preserves
  • 1 tsp water
  • dash of salt
  • 1 Tbsp sliced almonds, toasted

Instructions

  1. Cut the acorn squash in half lengthwise; discard seeds and membrane.
  2. Place the squash halves, cut side down, in a vegetable steamer.
  3. Arrange apricot halves around the squash in the steamer.
  4. Place the steamer over boiling water in a Dutch oven.
  5. Cover and steam for 15 minutes or until the squash is crisp-tender.
  6. Coarsely chop the dried apricots.
  7. Combine the chopped apricots, raisins, apricot preserves, water, and a dash of salt.
  8. Spoon the fruit mixture evenly into each squash half.
  9. Cover and steam for an additional 5 minutes or until the squash is tender.
  10. Sprinkle with toasted sliced almonds before serving.
