Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 2 tablespoons oil
  • pinch of salt
  • 1 tablespoon sugar
  • 2 pints berries or other fruit
  • 2 to 3 tablespoons flour for dusting
  • vegetable oil for frying

Instructions

  1. Separate egg yolks from egg whites and beat the whites until stiff.
  2. In a bowl, add the egg yolks, milk, flour, oil, salt, and sugar; beat until smooth.
  3. Fold the beaten egg whites into the batter gently.
  4. Cover the batter with plastic wrap and set aside.
  5. Dust the berries or fruit with flour and dip into the batter.
  6. Fry the coated fruit in hot vegetable oil about 5 minutes until golden and cooked through.
  7. Remove the fritters from the oil and drain excess oil.
  8. Dust with powdered sugar before serving.
