Ingredients

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 2 cups pumpkin
  • 2/3 cup water
  • 3 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoons cinnamon
  • 2/3 cup nuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a bread loaf pan.
  2. In a large mixing bowl, cream together the shortening and sugar until well combined.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the pumpkin (or sweet potato/zucchini) and water until smooth.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cloves, nutmeg, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the nuts evenly into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
