Fruit 'N Nut Spread

A creamy, fruity spread combining cottage cheese, orange segments, and almonds, perfect for a nutritious snack or light appetizer served with crackers or bread.

Ingredients

  • 1 cup low fat cottage cheese
  • 3 oz. cream cheese, softened
  • 1 teaspoon lemon juice
  • 1/4 teaspoon grated lemon rind
  • 11 oz. can mandarin orange sections, drained or 1 large orange, sectioned
  • 2 tablespoons chopped, slivered almonds

Instructions

  1. In a blender or food processor, combine cottage cheese, lemon juice, and lemon rind.
  2. Blend until smooth and creamy.
  3. Coarsely chop the mandarin orange sections or large orange segments.
  4. Stir the chopped oranges and slivered almonds into the mixture.
  5. Chill the spread for at least an hour before serving.
  6. Serve with Triscuit wafers or your preferred crackers.
