Ingredients

  • 3 large chicken breasts
  • 1 chicken bouillon cube
  • 1/4 teaspoon grated orange peel
  • 1/4 cup orange juice
  • 1 tablespoon chopped green onions

Instructions

  1. Cut the chicken breasts in half lengthwise.
  2. Sprinkle the chicken with salt and arrange in a baking dish.
  3. Dissolve the chicken bouillon cube in 1/2 cup boiling water.
  4. Stir in grated orange peel, orange juice, chopped green onions, and a dash of pepper.
  5. Pour the mixture over the chicken and cover with foil.
  6. Bake at 350°F until the chicken is tender.
  7. Remove the chicken from the dish and place on a platter.
  8. Strain the dish juices and reserve 3/4 cup for the sauce.
  9. In a saucepan, blend cornstarch with 2 tablespoons cold water.
  10. Stir in the reserved juices and cook, stirring constantly, until the mixture becomes thick and bubbly.
  11. Add grapes to the sauce if desired for extra flavor.
  12. Spoon the sauce over the chicken and sprinkle with paprika.
