Fruited Ricotta Bread

Ingredients

  • 4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c. Ricotta cheese
  • 3 large eggs, beaten
  • 1 tsp. vanilla extract
  • 2/3 c. sugar
  • 3 Tbsp. chopped candied fruit
  • 2 Tbsp. golden raisins
  • 1 Tbsp. chopped almonds
  • 1 Tbsp. grated lemon peel
  • 1 Tbsp. butter or margarine, melted

Instructions

  1. Preheat oven to 375°.
  2. Grease and flour cookie sheet.
  3. Sift flour, baking powder and salt into large bowl.
  4. Make a well in center and stir in Ricotta, eggs, vanilla, sugar, candied fruit, raisins, almonds and lemon peel.
  5. Knead lightly until dough holds together.
  6. Shape into a 12-inch long loaf and place on prepared cookie sheet.
  7. Bake 50 to 60 minutes until toothpick inserted in center comes out clean.
  8. Transfer to wire rack.
  9. Brush butter or margarine over warm loaf; sift confectioners sugar over top.
  10. Cool completely.
  11. Makes 12 servings.
