Ingredients

  • 16 oz. can pineapple slices
  • two 16 oz. cans pork and beans, drained
  • 1/2 lb. bacon
  • 1/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1/2 cup molasses
  • 1 small onion
  • 1/4 teaspoon cloves
  • 1/4 teaspoon garlic

Instructions

  1. Drain the pineapple slices and reserve 4 whole rings.
  2. Chop the remaining pineapple into quarters.
  3. Combine pineapple quarters, drained pork and beans, cooked bacon, ketchup, brown sugar, molasses, diced sauteed onion, cloves, and garlic in a mixing bowl.
  4. Pour the mixture into a greased casserole dish.
  5. Bake until heated through and bubbly, about 15-20 minutes.
  6. Place the reserved pineapple rings on top of the casserole and sprinkle with additional brown sugar.
  7. Bake for an additional five minutes, or until the pineapple rings are browned and caramelized.
