Ingredients

  • 1 3/4 cups sifted flour
  • 3/4 teaspoon baking soda
  • 1 1/4 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup ripe bananas mashed
  • 1 cup jellied cranberry sauce cubed
  • 1/2 cup chopped nuts

Instructions

  1. Sift together flour, baking soda, cream of tartar, and salt.
  2. Beat shortening until creamy.
  3. Gradually add sugar, beating until light and fluffy.
  4. Add eggs and beat well.
  5. Add flour mixture alternately with mashed bananas, 1/4 at a time, stirring only until flour is moistened.
  6. Very carefully fold in cubed cranberry sauce and chopped nuts.
  7. Turn into a well-greased 9 x 5 x 3-inch loaf pan.
  8. Bake at 350°F (175°C) about 1 hour.
