Ingredients

  • 8 oz. dried apricots
  • 8 oz. dried peaches
  • 8 oz. dried apples
  • 8 oz. pitted prunes
  • 1 lb. raisins
  • 1 can pitted sour red cherries
  • 2 cups grape juice
  • 1 cup pineapple juice
  • 1 cup orange juice
  • 1 cinnamon stick
  • 3 tablespoons tapioca

Instructions

  1. Grind or chop all dried fruit except raisins.
  2. Add 1 quart of water and the cinnamon stick to the apples and cook until tender.
  3. Add 1 quart of water to the other dried fruit and cook in a large pot until the fruit is tender.
  4. Combine all ingredients and simmer until the tapioca is clear.
  5. Add sugar to taste, using 1 to 2 cups, to sweeten the soup.

Tips & Substitutions

For a thicker consistency, consider adding more tapioca, but ensure you let it simmer long enough to become clear. If you can't find dried peaches, feel free to substitute with dried nectarines. Fresh fruits can also be used; just adjust the cooking time accordingly. A pinch of nutmeg can enhance the flavor alongside the cinnamon.

Serving Suggestions

Serve this comforting Frukt Soppa warm or chilled, garnished with a sprinkle of cinnamon or a dollop of whipped cream. It pairs beautifully with Bible Honey Cake for a sweet finish. For a refreshing complement, consider serving it alongside Nonalcoholic Holiday Punch for a festive gathering.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to a week. To reheat, simply warm it on the stove over low heat, stirring occasionally, until heated through. If it thickens too much, add a little water or juice to reach your desired consistency.

Frequently Asked Questions

Can I use fresh fruit instead of dried fruit for this recipe?

Yes, you can use fresh fruit, but you'll need to adjust the cooking time as fresh fruit cooks faster. Aim to reduce the initial water added and monitor the texture closely to ensure it's tender without becoming mushy.

What type of tapioca is best for this recipe?

Small pearl tapioca is ideal for this dish, as it cooks evenly and gives the soup a nice texture. Avoid instant tapioca, as it may not thicken the soup properly and can alter the final consistency.

How can I make this recipe vegan?

This Frukt Soppa is already vegan-friendly! Ensure that the grape, pineapple, and orange juices are 100% fruit juice with no added sugars or animal products. You can also adjust the sweetener to your preference using vegan options.
