Ingredients

  • 1 c. flat beer
  • 1 Tbsp. salt
  • 2 tsp. baking powder
  • 1 1/2 tsp. sugar
  • 1 c. flour
  • 1/8 tsp. cayenne
  • 1 to 1 1/4 lb. peeled, deveined large or medium shrimp
  • vegetable oil

Instructions

  1. Open the beer and pour off into a bowl 2 hours before mixing the batter.
  2. Leave uncovered at room temperature.
  3. To prepare the batter, combine all the ingredients in a large mixing bowl.
  4. Whip at medium-high speed with an electric mixer until frothy and rather thin in texture, or vigorously whisk by hand for about 4 minutes.
  5. Cover the bowl with plastic wrap and let stand at room temperature for at least 3 hours.
  6. Dip peeled, deveined large or medium shrimp into the batter.
  7. Deep fry the coated shrimp in vegetable oil until golden and crispy.
