Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 egg
  • 3 tablespoons oil
  • 4 strips bacon
  • 3/4 cup cornmeal
  • 1/4 cup sugar
  • 3/4 to 1 cup milk
  • 4 tablespoons baking powder

Instructions

  1. Combine the flour, cornmeal, sugar, salt, and baking powder in a bowl; make a well in the center.
  2. Add the egg, oil, and milk to the dry ingredients; mix until well moistened.
  3. Place the bacon strips in the bottom of a large cast-iron skillet or a 13 x 9 x 2-inch pan.
  4. Pour the batter over the bacon in the skillet or pan.
  5. Bake at 400°F for 20 minutes, or until golden brown and cooked through.
