A hearty ground meat dressing packed with savory herbs and vegetables, perfect for stuffing or serving as a main dish for family gatherings and festive occasions.

Ingredients

  • 2 lb. ground round
  • 1 1/2 lb. ground pork
  • 3 large onions
  • 4 ribs celery
  • 1 bell pepper
  • 1 large bunch green onions
  • 1 Tbsp. parsley
  • 1 tsp. thyme
  • 3 cloves garlic
  • 1/2 loaf stale French bread
  • 2 bay leaves
  • salt and pepper
  • oil

Instructions

  1. Chop the onions, celery, bell pepper, and green onions.
  2. In a large pot, cook the ground round until browned, skimming off excess grease.
  3. Add the chopped vegetables and cook for about 15 minutes.
  4. Wet the stale French bread and wring it almost dry.
  5. Chop the bread into small pieces and slowly add to the dressing mixture.
  6. Do not add so much bread that the dressing becomes dry.
  7. Season with salt and pepper to taste.
  8. Cook the mixture on low fire for about 1 hour.
  9. After cooking, add 1 stick of butter to the dressing.
  10. If the dressing is too wet, add Italian bread crumbs to adjust consistency.
  11. Once cooled, beat one egg and add it to the dressing before stuffing into a bird or baking dish.
