Ingredients

  • 4 or 5 medium size overripe bananas
  • 1/2 cup soft butter
  • 1 cup sugar
  • 2 eggs
  • 2 tablespoons orange juice
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon

Instructions

  1. Cream together butter and sugar with a hand mixer.
  2. Add eggs; mix well.
  3. Add orange juice and bananas; mix well.
  4. Mix in all dry ingredients until just moist.
  5. Pour into a greased loaf or 9 x 9-inch square or 8-inch cake pan.
  6. Bake at 350°F for about 1 hour. Check for doneness and bake longer or remove if a knife comes out clean.
  7. Cool on wire rack for 1 hour and remove.
