Ingredients

  • 4 hard-boiled eggs
  • 1/2 lb. bacon
  • 1 (15 oz.) can chopped spinach
  • 1 cup sugar
  • 7/8 cup cider vinegar
  • 1/2 cup water
  • 1/4 cup flour
  • mashed potatoes

Instructions

  1. Cut bacon into 1-inch pieces and fry in a large skillet.
  2. Drain off all but approximately 2 tablespoons of grease.
  3. In a large jar, mix sugar, vinegar, water, and flour.
  4. Shake vigorously until creamy.
  5. Add the mixture to the skillet with bacon; add chopped spinach.
  6. Slice hard-boiled eggs and add to the skillet.
  7. Cook for approximately 5 minutes.
  8. Serve the mixture over mashed potatoes.
