Ingredients

  • 2 c. chopped zucchini
  • 1 c. chopped tomatoes
  • 1/2 c. chopped onion
  • 1/3 c. grated cheese
  • 1 c. milk
  • 1/2 c. Bisquick
  • 2 eggs
  • salt and pepper

Instructions

  1. Grease two 9-inch pie plates.
  2. Sprinkle chopped zucchini, tomatoes, onion, and grated cheese evenly in each pie plate.
  3. In a bowl, beat the eggs, milk, Bisquick, salt, and pepper until smooth.
  4. Pour the egg mixture over the vegetables and cheese in each pie plate.
  5. Bake in a 400°F (200°C) oven for 45 minutes or until golden brown.
