- Cut beef fillet into strips about 1 1/2 x 1/4 inches. (Best to freeze fillet and slice when semi-frozen.)
- Crush garlic and mix with brown sugar, soy sauce, stock or water, and sherry or sake.
- Add the beef strips to the mixture; stir and toss well into the marinade.
- Leave the beef to marinate for about 30 minutes, stirring occasionally.
- Heat oil in a wok or frypan and fry the beef over high heat for 3 minutes, stirring constantly.
- Serve immediately over rice or noodles.
