Ingredients

  • 1.5 lb beef, cut for stroganoff
  • 1/8 cup salad oil
  • 1 red Bermuda onion, chopped
  • 1/2 cup green onions, sliced thin
  • 1 (8 oz) can bamboo shoots, drained
  • 1 (8.5 oz) can water chestnuts, drained and sliced
  • 4 oz mushrooms, sliced
  • 1/2 cup beef broth
  • 1 tablespoon sugar
  • 2 tablespoons cornstarch
  • 1/2 cup soy sauce
  • 1 (1 lb) can sliced Freestone peaches, undrained

Instructions

  1. Brown the beef in salad oil in a large skillet or wok.
  2. Add chopped Bermuda onions, sliced green onions, drained bamboo shoots, drained sliced water chestnuts, and sliced mushrooms. Stir in beef broth and sugar.
  3. Cover and simmer for 5 minutes to allow flavors to meld.
  4. In a small bowl, blend cornstarch with 1 tablespoon of water and soy sauce until smooth.
  5. Add the cornstarch mixture to the skillet and simmer, stirring occasionally, until the sauce thickens and the juice is reduced.
