Ingredients
- 1.5 lb beef, cut for stroganoff ⓘ
- 1/8 cup salad oil ⓘ
- 1 red Bermuda onion, chopped ⓘ
- 1/2 cup green onions, sliced thin ⓘ
- 1 (8 oz) can bamboo shoots, drained
- 1 (8.5 oz) can water chestnuts, drained and sliced ⓘ
- 4 oz mushrooms, sliced ⓘ
- 1/2 cup beef broth
- 1 tablespoon sugar ⓘ
- 2 tablespoons cornstarch ⓘ
- 1/2 cup soy sauce ⓘ
- 1 (1 lb) can sliced Freestone peaches, undrained ⓘ
Instructions
- Brown the beef in salad oil in a large skillet or wok.
- Add chopped Bermuda onions, sliced green onions, drained bamboo shoots, drained sliced water chestnuts, and sliced mushrooms. Stir in beef broth and sugar.
- Cover and simmer for 5 minutes to allow flavors to meld.
- In a small bowl, blend cornstarch with 1 tablespoon of water and soy sauce until smooth.
- Add the cornstarch mixture to the skillet and simmer, stirring occasionally, until the sauce thickens and the juice is reduced.
