Garlic Lime Rice

Ingredients

  • 3 garlic cloves, thinly sliced
  • 1 tablespoon olive oil
  • 1 cup dry long grain white rice
  • 2 cups water
  • 2 tablespoons fresh lime juice
  • 1 teaspoon kosher salt
  • 2 tablespoons minced fresh cilantro
  • 2 teaspoons lime zest, minced

Instructions

  1. Saute garlic in oil in a saucepan over mid-high until golden.
  2. Stir in rice; saute 2 minute.
  3. Add water, lime juice, and salt' bring to a boil. Cover, reduce heat to low, and simmer until water is absorbed, 20 minute
  4. Stir in cilantro and lime zest.
