Garlic Tomato Soup

Ingredients

  • 2 1/2 Tbsp. olive oil
  • 3 big cloves garlic, minced
  • 2 Tbsp. paprika
  • 4 1/2 c. chicken broth
  • 4 c. pureed fresh tomatoes
  • salt and pepper to taste
  • Tabasco to taste

Instructions

  1. Heat olive oil in a pan and sauté minced garlic for 1 to 2 minutes.
  2. Remove the pan from heat and stir in paprika.
  3. Return to low heat and cook for 1 minute.
  4. Add chicken broth and pureed fresh tomatoes to the pan.
  5. Simmer the mixture for 10 to 15 minutes.
  6. Add Tabasco sauce and butter to taste before serving.
