Ingredients

  • 2 large leeks (white parts only)
  • 1 lb. potatoes (about 3 medium), peeled and diced
  • 1 Tbsp. butter or margarine
  • 2 c. chicken broth
  • freshly ground pepper to taste
  • salt to taste
  • 1 c. skim milk
  • 2 Tbsp. minced fresh parsley or 2 tsp. dried flakes
  • 1/2 c. grated Cheddar (2 oz.)

Instructions

  1. Separate and wash the leeks.
  2. Slice the leeks into 1/2-inch pieces.
  3. In a nonstick large saucepan, sauté the potatoes and leeks in butter or margarine for several minutes, stirring to prevent browning.
  4. Add chicken broth, freshly ground pepper, and salt if desired.
  5. Bring the chowder to a boil; reduce heat, cover, and simmer for 20 to 30 minutes or until tender.
  6. Gradually add the milk; heat gently, but do not boil.
  7. Stir in the minced fresh parsley or dried flakes.
  8. Serve the chowder with a generous sprinkle of grated Cheddar cheese.
