Garlicky Stuffed Quahogs

Ingredients

  • 12 fresh quahogs or 1 lb. chopped clams
  • 1/2 c. chopped fresh parsley
  • 5 cloves garlic
  • 1/4 lb. saltines
  • 2 slices bread
  • 1/2 c. butter
  • 1 onion, finely diced
  • 1/2 c. dry white wine or vermouth
  • juice of 2 lemons
  • 2 Tbsp. Worcestershire sauce
  • 1/2 tsp. dried thyme
  • 1/4 tsp. cayenne pepper
  • salt to taste

Instructions

  1. Open quahogs (easily done by putting them in the freezer for a short time).
  2. Roughly chop.
  3. In food processor, mince parsley and garlic.
  4. Add crackers and bread and pulse until coarse crumbs are formed.
