Gary's Potatoes are creamy, cheesy baked potatoes with a crispy topping, perfect for family dinners or potlucks, featuring tender potatoes, sharp cheddar, and savory seasonings.

Ingredients

  • 8 medium potatoes
  • 1/4 cup melted margarine or butter
  • 1 can cream of chicken soup
  • 2 cups sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 green onions or 1 medium onion, chopped
  • 2 cups shredded sharp Cheddar cheese

Instructions

  1. Boil potatoes with jackets in water with a bay leaf until tender.
  2. Cool, peel, and shred the potatoes into a bowl.
  3. Mix melted margarine or butter, cream of chicken soup, sour cream, salt, pepper, chopped green onions or onion, and 1 1/2 cups of shredded sharp Cheddar cheese.
  4. Add the mixture to the shredded potatoes and combine well.
  5. Pour the mixture into a greased 2 1/2-quart casserole dish and bake uncovered at 350°F for 30 minutes.
  6. Top with the remaining 1/2 cup Cheddar cheese and 1/2 cup crushed corn flakes.
  7. Bake for an additional 10 minutes until golden and bubbly.
