Ingredients

  • 6 lb. white fish (pike, carp or whitefish)
  • 5 onions
  • 2 qt. water
  • 4 tsp. salt
  • 1 1/2 tsp. pepper
  • 3 eggs
  • 3/4 c. ice water
  • 1/2 tsp. sugar
  • 3 Tbsp. matzo meal

Instructions

  1. Filet the fish, saving the skin, head, and bones.
  2. Combine the skin, head, and bones with 4 sliced onions, 1 quart water, 2 teaspoons salt, and 3/4 teaspoon pepper in a large pot.
  3. Bring to a boil and cook over high heat to prepare the fish stock.
