Shrimp Mariniere offers a rich, creamy sauce infused with wine and spices, complemented by tender shrimp and mushrooms—perfect for elegant appetizers or light meals.

Ingredients

  • 1/2 lb. mushrooms
  • 1 1/2 sticks butter
  • 1 c. finely chopped green onions
  • 5 1/2 Tbsp. flour
  • 3 c. milk
  • 1 tsp. salt
  • 1/2 tsp. ground red pepper
  • 2/3 c. white wine
  • 3 c. precooked shrimp
  • 2 egg yolks
  • paprika

Instructions

  1. Saute mushrooms in 2 tablespoons of butter and set aside.
  2. In a large heavy skillet or Dutch oven, melt remaining butter and saute green onions until tender.
  3. Blend in flour and cook slowly for 5 minutes, stirring constantly.
  4. Remove from heat; gradually stir in milk until smooth.
  5. Add salt, ground red pepper, and white wine.
  6. Bring to a boil. Reduce heat; simmer and stir for 10 minutes to thicken the sauce.
  7. Add shrimp and mushrooms, stirring lightly for 1 minute.
  8. Remove from heat and quickly beat in beaten egg yolks.
  9. Spoon into 6 large ramekins or 12 small ramekins (as appetizers).
  10. Sprinkle with paprika and heat under broiler.
  11. Serve from ramekins or transfer to a chafing dish over toast points.
