Ingredients

  • 1 pkg Tony Chachere gumbo mix
  • 1 can Ro-Tel tomatoes
  • 4 chicken breasts
  • salt and pepper
  • 4 to 5 Party Time sausages
  • 1 bell pepper
  • 3 celery stalks
  • 2 bunches green onions
  • 1 cup chopped okra
  • 2 cloves garlic
  • 2 tablespoons oil

Instructions

  1. Rinse chicken breasts thoroughly and cut into 1-inch pieces. Slice sausages into small pieces.
  2. Cook chicken in water for about 5 minutes and drain.
  3. In a large gumbo pot, dissolve the gumbo mix in water.
  4. Sauté chopped bell pepper, celery, and green onions in 2 tablespoons of oil until tender; add to boiling water.
  5. Add cooked chicken, sliced sausages, Ro-Tel tomatoes, salt, and pepper to the pot.
  6. Simmer the gumbo for about 30 minutes, adding extra roux if desired.
  7. Serve hot with crackers or cornbread.
