- Rinse chicken breasts thoroughly and cut into 1-inch pieces. Slice sausages into small pieces.
- Cook chicken in water for about 5 minutes and drain.
- In a large gumbo pot, dissolve the gumbo mix in water.
- Sauté chopped bell pepper, celery, and green onions in 2 tablespoons of oil until tender; add to boiling water.
- Add cooked chicken, sliced sausages, Ro-Tel tomatoes, salt, and pepper to the pot.
- Simmer the gumbo for about 30 minutes, adding extra roux if desired.
- Serve hot with crackers or cornbread.
