Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 1 c. salad oil
  • 1 c. chopped pecans
  • 1 tsp. soda
  • 1 c. buttermilk
  • 3 eggs
  • 1/2 tsp. salt

Instructions

  1. Mix oil, sugar, eggs, chopped prunes, buttermilk, salt, spices, and most of the flour in a bowl. Stir well to combine.
  2. Add chopped pecans and stir to incorporate.
  3. Add baking soda last, along with the remaining flour, and stir until just combined.
  4. Pour the batter into a well greased and floured loaf pan.
  5. Bake at 325°F (160°C) for 35 minutes or until a toothpick inserted into the center comes out clean.
