Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup butter or margarine, softened
  • 1 1/4 cups granulated sugar
  • 3 (8 oz.) packages cream cheese, softened
  • 1 quart sour cream
  • 2 teaspoons vanilla
  • 3 eggs
  • 1 can cherry pie filling (optional)

Instructions

  1. Blend graham cracker crumbs, softened butter or margarine, and 1/4 cup sugar until well mixed.
  2. Press the mixture firmly against the bottom and 2 1/2 inches up the sides of a spring-form pan to form the crust.
  3. Beat the softened cream cheese until fluffy.
  4. Gradually add remaining sugar and vanilla extract while beating.
  5. Beat in eggs one at a time until fully incorporated.
  6. Blend in sour cream and spread the mixture evenly in the prepared crust.
  7. Bake at 350°F (175°C) for 60 to 70 minutes or until the cheesecake is firm.
  8. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  9. Chill the cheesecake overnight in the refrigerator.
  10. Before serving, top with canned cherry pie filling if desired.
