Geri'S Cheese Cake

- Blend graham cracker crumbs, softened butter or margarine, and 1/4 cup sugar until well mixed.
- Press the mixture firmly against the bottom and 2 1/2 inches up the sides of a spring-form pan to form the crust.
- Beat the softened cream cheese until fluffy.
- Gradually add remaining sugar and vanilla extract while beating.
- Beat in eggs one at a time until fully incorporated.
- Blend in sour cream and spread the mixture evenly in the prepared crust.
- Bake at 350°F (175°C) for 60 to 70 minutes or until the cheesecake is firm.
- Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
- Chill the cheesecake overnight in the refrigerator.
- Before serving, top with canned cherry pie filling if desired.
