Ingredients

  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 teaspoon ginger
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda

Instructions

  1. Combine vegetable oil and 1 cup of sugar; add the egg and beat well.
  2. Stir in molasses.
  3. In a separate bowl, mix all-purpose flour, salt, soda, and ginger.
  4. Add the dry ingredients to the molasses mixture, stirring to combine.
  5. Roll the dough into 1-inch balls.
  6. Roll each ball in the remaining 1/4 cup of sugar.
  7. Place the cookies 2 inches apart on a greased cookie sheet.
  8. Bake at 350°F (175°C) for 10 to 12 minutes or until lightly browned.
