Tips & Substitutions

For a lighter version, consider substituting half of the all-purpose flour with whole wheat flour. You can also replace safflower oil with applesauce for a lower fat option. To enhance the flavor, try adding a splash of vanilla extract. When mixing, ensure the boiling water is added gradually to avoid cooking the batter. Be cautious not to overmix after adding the baking soda to maintain a fluffy texture.

Serving Suggestions

Serve the gingerbread warm, topped with a whipped cream substitute for a delicious contrast. It pairs beautifully with Orange-Sugared Pecans for added texture and flavor. You can also enjoy it alongside a cup of spiced tea or coffee. For a festive touch, consider drizzling a light glaze made from powdered sugar and lemon juice over the top before serving.

Storage & Reheating

Store any leftover gingerbread in an airtight container at room temperature for up to 3 days. For longer storage, wrap slices tightly in plastic wrap and freeze for up to 2 months. To reheat, simply place a slice in the microwave for 10-15 seconds or warm in a preheated oven at 300°F (150°C) for about 5-10 minutes until warmed through.
