Ingredients

  • 1 cup dried or fresh figs
  • 1/3 cup fresh lime juice (about 2 limes)
  • 1/4 cup mild honey
  • 2 to 3 teaspoons minced or grated fresh ginger
  • 2 pink grapefruit, skins and membranes removed and sectioned

Instructions

  1. If you are using dried figs, place them in a bowl and pour boiling water over them.
  2. Let stand for 10 minutes, then drain and cut in half lengthwise.
  3. Cut fresh figs in half lengthwise, unless they are very small.
  4. In a bowl, combine the figs, grapefruit sections, lime juice, honey, and minced or grated ginger.
  5. Gently toss to combine and let sit for a few minutes to allow flavors to meld.
  6. Serve chilled or at room temperature.
