Ingredients

  • 1 Tbsp. vegetable oil
  • 1 Tbsp. grated fresh ginger
  • 1 lb. medium shrimp, peeled
  • 1 (20 oz.) can pineapple chunks, drained
  • 1 (6 oz.) pkg. frozen snow peas
  • 1 sweet red or green pepper, sliced
  • 1 Tbsp. cornstarch
  • 1/2 tsp. rice wine or cider vinegar
  • 1/4 tsp. sugar
  • salt to taste

Instructions

  1. In wok over medium-high heat, heat oil for 1 minute.
  2. Add grated fresh ginger; cook for 1 minute.
  3. Add shrimp and cook for 4 minutes.
  4. With a slotted spoon, remove shrimp and set aside.
  5. Add pineapple chunks, snow peas, and sliced pepper to wok.
  6. Cook for 1 minute.
  7. In a measuring cup, stir pineapple juice, cornstarch, rice wine or cider vinegar, sugar, and salt until smooth.
  8. Add the mixture to the wok.
  9. Bring to a boil.
  10. Add the cooked shrimp back into the wok.
  11. Cook for 3 minutes until the sauce thickens.
