Ingredients

  • 4 oz. butter
  • 1 cup sugar
  • 2 tablespoons golden syrup
  • 1 egg
  • 2 cups self-rising flour
  • 3 teaspoons ground ginger

Instructions

  1. Melt butter in a pan and remove from heat; add sugar, golden syrup, and beaten egg.
  2. Mix until well combined.
  3. Sift self-rising flour and ground ginger into a bowl and pour in the butter mixture.
  4. Mix until combined.
  5. Allow the mixture to cool slightly.
  6. Roll teaspoons of mixture into balls.
  7. Place the balls well apart on lightly greased cookie sheets.
  8. Bake in a moderate oven for 12 to 15 minutes.
