Ingredients

  • 1.5 to 2 gallons peppers (hot and sweet)
  • 1 pint oil
  • 2 (6 oz) cans tomato paste
  • 2 cups vinegar
  • 1 cup sugar
  • Garlic cloves

Instructions

  1. Wash and prepare the peppers, removing stems and slicing as desired.
  2. In a large pot, combine peppers, tomato paste, vinegar, sugar, and garlic cloves.
  3. Bring the mixture to a boil over medium heat, stirring occasionally.
  4. Reduce heat to low and simmer uncovered for about 45 minutes, stirring occasionally.
  5. Taste and adjust sweetness or heat if needed.
  6. Allow to cool slightly, then transfer to sterilized jars or bottles.
  7. Seal and store in a cool, dark place for at least a week before using to allow flavors to meld.
