Ingredients

  • 2 squirrels, cut in pieces including heads
  • 1 stick butter
  • 1 cup chopped onions
  • 2 cloves garlic crushed
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup water
  • 1 tablespoon green onion tops chopped
  • 1 tablespoon flour
  • 1 tablespoon black pepper
  • 1 tablespoon red pepper
  • 1 tablespoon white pepper
  • 1 tablespoon sea salt

Instructions

  1. Cut each squirrel into eight pieces, including heads.
  2. Combine black pepper, red pepper, white pepper, and sea salt together.
  3. Season both sides of the squirrel pieces with the spice mixture.
  4. Melt butter in a 12-inch cast-iron skillet and fry squirrel until browned all over and starting to stick to the pan.
  5. Remove the squirrel; add chopped onions and crushed garlic to the skillet.
  6. Cook until vegetables are soft, then add water, Worcestershire sauce, and the squirrel back into the skillet.
  7. Cover and let simmer until tender, about 1 to 2 hours.
  8. Add flour and chopped green onion tops; cook for 5 minutes, stirring until slightly thickened.
  9. Serve with rice.
