Ingredients

  • 4 to 6 lb. fresh pork shoulder
  • 1/2 cup apricot preserves
  • 2 teaspoons vinegar
  • 1 teaspoon mustard
  • 1/4 teaspoon ginger

Instructions

  1. Place meat on rack in shallow roasting pan.
  2. Roast at 325°F for 4 hours.
  3. Combine apricot preserves, vinegar, mustard, and ginger to make the sauce.
  4. Remove meat from oven and spoon the sauce over it.
  5. Roast for an additional 15 minutes to glaze.
