Ingredients

  • 24 vanilla wafers
  • 3/4 cup sugar
  • 16 oz cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (21 oz) can cherry pie filling

Instructions

  1. Place vanilla wafers in paper-lined muffin cups.
  2. Cream sugar, cream cheese, eggs, and vanilla in a mixer bowl until light and fluffy.
  3. Fill the prepared muffin cups three-quarters full with the cream cheese mixture.
  4. Bake at 375°F (190°C) for 10 to 15 minutes or until set.
  5. Allow to cool completely.
  6. Spread cherry pie filling on the cooled cheesecakes.
  7. Chill until serving time.
