Ingredients

  • 1 1/2 cups converted rice
  • 2 cups boiling water
  • 3 scallions, chopped
  • 1 (16 oz.) can whole berry cranberry sauce
  • 1 (8 oz.) bottle French dressing
  • 1 (1.2 oz.) envelope dry onion soup mix
  • 6 bone-in chicken breast halves, skinned

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In the bottom of a 9 x 13-inch baking dish, combine the rice, boiling water, and chopped scallions. Mix well.
  3. Place the bone-in chicken breast halves on top of the rice mixture.
  4. In a bowl, mix the cranberry sauce, French dressing, and dry onion soup mix.
  5. Pour the cranberry mixture evenly over the chicken and rice.
  6. Bake uncovered for about 60 minutes, or until the chicken is cooked through and tender.
