Ingredients

  • 1 cup self-rising cornmeal
  • 1/2 cup sour cream
  • 1 cup cream-style corn
  • 1/2 cup cooking oil
  • 2 eggs

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place approximately 2 tablespoons of cooking oil in a 10-inch ovenproof skillet or an 8-inch or 9-inch square baking pan.
  3. Put the pan in the hot oven until the oil is hot.
  4. Tilt the pan to coat the bottom evenly with oil.
  5. Mix all ingredients together until well combined.
  6. Pour the mixture into the hot, greased pan.
  7. Bake for 20 to 25 minutes or until golden brown.
