Ingredients

  • 1 cup Whole wheat flour
  • 1/2 cup Oat flour
  • 1/2 cup Brown sugar
  • 1/2 cup Date syrup
  • 3 Fully ripe bananas
  • 2 Eggs
  • 1/2 cup Sunflower seed butter
  • 1/4 cup Chopped walnuts
  • 1/4 cup Dark Chocolate chips
  • 1-1/2 teaspoons Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Cinnamon powder
  • 1/2 teaspoon Clove powder

Instructions

  1. Peel and mash the bananas in a large bowl. Add all the other ingredients and mix using a hand blender until everything is nicely incorporated, about 2 minutes. Butter and line a 9x12 inch loaf pan or a round cake pan, and pour the mixture into it. Top with additional walnuts, chocolate chips, sunflower seeds and shredded coconut if desired. Bake at 375 degrees for 40-45 minutes or until a skewer inserted in the center comes out clean.
  2. This banana bread tastes the best the next day as the spices and the sugar in the date syrup have all had a chance to mingle. Enjoy.
