Golden Pineapple Salad

A light, refreshing pineapple salad with a tangy lemon gelatin base, perfect for summer gatherings or as a cool, fruity side dish for any occasion.

Ingredients

  • 2 1/2 envelopes lemon flavored artificially sweetened gelatin
  • 1 1/4 cups cold water
  • 1 1/4 cups hot water
  • 2/3 cup unsweetened pineapple chunks, drained
  • 1 large onion, diced
  • 5 unsweetened Bing cherries, drained

Instructions

  1. Dissolve the lemon flavored gelatin in hot water.
  2. Add cold water and let stand until the mixture starts to gel.
  3. Stir in drained pineapple chunks and diced onion into the gelatin mixture.
  4. When set, cut into servings and place on lettuce leaves.
  5. Garnish each serving with a drained Bing cherry.
