Ingredients

  • 2 (8 1/2 oz.) cans crushed pineapple (undrained)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3/4 cup cottage cheese
  • 1 teaspoon vanilla

Instructions

  1. Combine crushed pineapple, sugar, cornstarch, and water in a small saucepan.
  2. Bring the mixture to a boil.
  3. Cook for 1 minute, stirring constantly.
  4. Blend together sugar, butter, flour, cottage cheese, vanilla, and salt until smooth.
  5. Gradually add eggs and milk to the cheese mixture, beating constantly.
  6. Pour pineapple into the prepared crust, spreading evenly.
  7. Gently pour the custard over the pineapple layer, being careful not to disturb it.
  8. Bake at 425°F for 15 minutes.
  9. Reduce oven temperature to 325°F and bake for an additional 45 minutes.
