- Preheat oven to 350 degrees.
- dice 1 medium sized peach, then sprinkle with brown sugar in a medium sized mixing bowl.
- melt Smart Balance in microwaveable measuring cup.
- add dry ingredients starting with the oatmeal in a food processor, pulse until blended completely.
- add egg to milk.
- Pour slowly into food processor while it is running, add melted butter, then scrape down sides and bottom as soon as the mixture smooths out.
- pulse again for about 15 seconds to complete mixing.
- Pour batter onto peach slices and brown suger mixture, then fold the mixture completely.
- put about 1 heaping tablespoon of peach batter into a greased muffin tin.
- bake at 350 degrees for about 25 minutes or until golden.
