Ingredients

  • 1 pint assorted beans and peas
  • 2 1/2 teaspoons salt
  • ham or ham hocks
  • 1 large onion
  • 1 large can tomatoes
  • 1 large dried red pepper
  • 1 clove garlic
  • juice of 1 lemon

Instructions

  1. Add salt to the assorted beans and peas, cover with water, and soak overnight.
  2. Rinse the soaked beans and place them into 2 quarts of water.
  3. Add ham or ham hocks and chopped onion to the beans.
  4. Bring to a boil and cook slowly for 2 1/2 to 3 hours until beans are tender.
  5. Add canned tomatoes, dried red pepper, minced garlic, and lemon juice to the soup and simmer briefly before serving.
