"Goodbye" Turkey

A comforting casserole combining tender turkey, rice, vegetables, and cheesy sauce, baked to perfection. Ideal for family dinners and holiday gatherings alike.

Ingredients

  • 5 Tbsp. sifted flour
  • 1 tsp. salt
  • 1/4 tsp. onion salt
  • 1/4 c. butter, melted
  • 2 1/2 c. milk or light cream
  • 1 1/3 c. Minute rice
  • 1 1/2 c. turkey or chicken broth
  • 1/2 c. grated American cheese
  • 1 1/2 c. cooked asparagus or sweet peas
  • 2 c. turkey

Instructions

  1. Sift flour, half of the salt, and onion salt into melted butter.
  2. Stir in milk and cook over hot water, stirring occasionally until thickened.
  3. Pour Minute rice into a 2-quart shallow baking dish.
  4. Combine broth with remaining salt and pour over rice.
  5. Sprinkle half of the cheese over the rice.
  6. Top with cooked asparagus or sweet peas, then turkey.
  7. Pour the sauce over the top.
  8. Sprinkle with remaining cheese.
  9. Bake at 375°F for about 20 minutes.
  10. Top with almonds before serving.
