Light, crisp meringue cookies infused with peppermint and chocolate chips, perfect for festive occasions or satisfying a sweet craving with a minty, chocolaty crunch.

Ingredients

  • 2 egg whites
  • 3/4 cup sugar
  • dash of salt
  • 6 oz. milk chocolate chips
  • 1/8 teaspoon peppermint extract
  • food coloring (green or red)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat egg whites until fluffy.
  3. Gradually add sugar and continue beating.
  4. Add salt, 2 or 3 drops of food coloring, and peppermint extract.
  5. Beat until stiff peaks form.
  6. Fold in chocolate chips.
  7. Cover a cookie sheet with tinfoil; do not grease.
  8. Drop teaspoonfuls of batter onto the prepared cookie sheet.
  9. Bake in the oven for about 5 minutes.
  10. Turn off the oven and let the cookies stand in the closed oven for several hours or overnight.
