  • 2 lb. boneless deer
  • 2 Tbsp. corn oil
  • 2 medium onions
  • 2 tsp. salt
  • 2 tsp. paprika
  • dash of pepper
  • 3 c. water
  • 2 cloves garlic
  • 1 c. plain low-fat yogurt
  • 1 tsp. caraway seed
  • 2 Tbsp. tomato paste
  • 1 Tbsp. cornstarch or flour

Instructions

  1. Cut the boneless deer into 1-inch square pieces.
  2. Heat the corn oil in a large pot and add the meat, browning on all sides.
  3. Add the chopped onions and minced garlic; sauté for 2 minutes.
  4. Stir in salt, paprika, pepper, tomato paste, caraway seed, and flour or cornstarch.
  5. Add water and simmer very slowly for 1 1/2 hours or until the meat is tender.
  6. Stir in the low-fat yogurt and remove from heat immediately.

Tips & Substitutions

For a richer flavor, consider marinating the deer meat in yogurt and spices overnight. If you don’t have caraway seeds, you can substitute them with cumin for a different but delicious taste. For a vegetarian option, use hearty vegetables like mushrooms or eggplant instead of meat. Make sure to cut the vegetables into similar size pieces for even cooking.

Serving Suggestions

Serve the goulash over a bed of egg noodles or with crusty bread to soak up the sauce. A side of steamed green beans or a fresh salad would complement the dish nicely. For an added touch, garnish with fresh herbs like parsley. This dish pairs beautifully with Hot Spinach Spread for a delicious meal combination.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. When reheating, add a splash of water to prevent the goulash from drying out. Heat gently on the stove over low heat, stirring occasionally, until warmed through. It can also be frozen for up to three months; thaw in the refrigerator before reheating.

Frequently Asked Questions

Can I use other types of meat for this goulash?

Yes, you can substitute boneless deer with beef, pork, or even turkey. Adjust the cooking time based on the type of meat; for instance, beef may require a longer simmering time to become tender.

What can I use instead of low-fat yogurt?

If you prefer a dairy-free option, coconut yogurt works well as a substitute. Alternatively, you can use sour cream, but be mindful that it will alter the flavor slightly. Just add it at the end of cooking to prevent curdling.

Can I make this recipe in a slow cooker?

Absolutely! Brown the meat and onions first, then transfer them to a slow cooker. Add all other ingredients and cook on low for 6-8 hours. This method allows the flavors to develop even more, resulting in a deliciously tender goulash.
