Finland Casserole
A hearty Finnish casserole featuring tender vegetables and a crispy cracker topping, perfect for cozy family dinners or comfort food gatherings.
Ingredients
- 3 medium turnips, peeled and thinly sliced ⓘ
- 2 medium zucchini, thinly sliced ⓘ
- 1 large onion, thinly sliced and separated into rings ⓘ
- 2 large tomatoes, seeded and chopped ⓘ
- 1 cup broccoli flowerets ⓘ
- 1 cup cauliflower flowerets
- 8 tablespoons butter or margarine, melted ⓘ
- 1 tablespoon dry white wine ⓘ
- 1 1/2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 3/4 cup crushed round crackers ⓘ
Instructions
- In a medium saucepan, cook turnips, covered, in a small amount of boiling salted water for 4 minutes; add zucchini and onion. Continue cooking 3 minutes more; drain.
- In a large mixing bowl, combine cooked turnips, zucchini, onion, chopped tomatoes, broccoli flowerets, cauliflower flowerets, 6 tablespoons of melted butter or margarine, white wine, Worcestershire sauce, garlic powder, salt, and pepper.
- Turn the vegetable mixture into a 12 x 7 1/2 x 2-inch baking dish.
- Toss the crushed crackers with the remaining melted butter or margarine; sprinkle over the vegetables.
- Bake in a 350°F oven for 40 minutes.
- Sprinkle with cheese and bake for an additional 5 minutes or until the cheese is melted.
- Serve with a slotted spoon.
