Ingredients

  • 1 can beef consomme
  • 1 can French onion soup
  • 4 oz. can sliced mushrooms
  • 1 1/3 cups basmati rice
  • 1 stick melted butter
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Mix all ingredients except the cheese in a 2 1/2-quart casserole.
  2. Cover and bake at 350°F for 1 hour, stirring once after 30 minutes.
  3. Fluff rice lightly with a fork and sprinkle with Parmesan cheese.
  4. Return to oven and bake for an additional 30 minutes until heated through and cheese is melted.
